Here's what I think those mesh fabrics are perfect for: pantyhose, under-layer of T-shirt, hair accessories, curtain for diorama. Sewing projects for 12" 16" dolls like Blythe, FR, PP, BJD, Momoko, etc.
I don't have much knowledge about fabrics, I only pick fabrics that I personally think it's good for doll clothes sewing projects.
